Chef Victor Roldan was born in Jalisco, Mexico as the fifth son to a family of six. He grew up in a private community called La Colonia, which was a place where everyone knew each other. A lot of families in La Colonia started businesses in their homes by selling tacos, tamales, and other traditional dishes. At nighttime, residents would walk the streets to buy dinner. It was a beautiful time because it brought the community close together.
His mother, Cleotilde Torres, had a cenaduria, which is a restaurant where food is only served at night. She was a great cook, and Victor was impressed by her knowledge of the kitchen. Before Victor started his career as a chef, he didn't realize that some of her cooking techniques were actually French.
After Victor graduated from high school in Mexico, he attended the University of Guadalajara majoring in chemical engineering. His goal was to become an engineer, but after his father passed away, his mother immigrated to California in search of a better life for her six children. Once in the United States, Victor attended Santa Rosa High School again as a junior to learn English. After graduation, he went on to Santa Rosa Junior College where he earned associate degrees in Art and Science, and a Microcomputer System Specialist certificate.
In 2002, Victor married his wife Elisa. Together they now have two lovely children. Their eldest daughter Cathleen, who now attends college, and their son Victor who is in elementary school.

Victor worked in a kitchen for more than 20 years as the head chef at a major Sonoma County catering company. Over the course of his experience, he has been able to enhance his multi-culinary skills in California,Mediterranean, French, Italian, Mexican and Asian cuisines.
